Most anticipated baking book of my year
I've been following Nicola for a long time and struggled to stay patient for the US release of this book. It was worth it, though, because I believe this is a book I will actually bake my way through in its entirety. I love the English influence/focused recipes (can't wait to make a steamed sponge cake). Her instructions are friendly and thorough, which meant that I adequately worked my earl grey scone dough and wound up with the best, fluffiest scones I've ever tasted. The miso walnut double-thick chocolate-chip cookies are a new family favorite. The first half of the book gets into the chemistry of baking in a fascinating way, and I overall can't recommend the book enough.

Best baking book I can imagine.
Great charts/graphs explaining relationships of basic ingredients (flour, sugar, eggs, etc.) and why/how they work together. Many recipes but no reason to buy just for them but to up your baking game significantly. Love it and highly recommend.

Wow!
This book made a before and after in cooking books for me. It lays the foundations in the beginning giving the reader a masterclass in baking, then moving into recipes devised by time to make. The design and art are superb. Can’t recommend this book enough. Get two copies and give one as gift to someone you love.
